Dough Weight 16,300 kg.
Kneading Time: about 15 minutes
Dough Temperature: 27-28 °C
1. Fermentation: 20 – 30 minutes 
Dough Weight: Adjust to existing bread molds or as desired.
2. Fermentation: Approximately 40-50 minutes
Oven Temperature: It is put into the oven at 240 °C and then the temperature is lowered.
Cooking Time: About 50 minutes
